Cherry Coconut Flapjacks

It’s going to be in the low 90’s today so obviously what I want to do most in the world is bake. I’ve had a yearning for flapjacks for a while and it’s not something these funny Americans seem to do. So there’s no option but to fire up the oven and make some myself. Luckily these babies are super fast to make.

Cherry Coconut Flapjacks
Makes a 9 ½ x 13 inch pan of flapjacks just over an inch thick

300g unsalted butter
80g dark brown sugar
80g light brown sugar
5 TBsp Golden Syrup
450g Porridge Oats (I used a mix of quick cook and whole grain)
150g Unsweetened Shredded coconut
200g quartered glace cherries.

Cherry Coconut Flapjacks

Preheat oven to 350F/180C.
Melt the butter, sugars and syrup over a low heat, once everything is melted together remove from the heat.
Add the coconut and cherries. Mix well. Fold in the oats until everything is well combined and coated with the sugar mix.
Pour into a baking parchment lined tin and press down well with the back of a metal spoon. If you don’t press it down well your flapjacks will be too crumbly.
Bake in the oven for 25-30 mins until golden on top. Leave to cool in pan. Cut into squares.
